You wouldn’t believe how easy it is to make these soft chocolate chip and peanut butter granola bars. It’s a no bake recipe that’s very simple and delicious.

I was looking for a super quick and easy snack and decided to make these chewy chocolate chip, honey and peanut butter granola bars. Two flavours I love together are peanut butter and chocolate, they make this homemade granola bars irresistible! Consider this recipe your new go-to for making a quick and easy snack in no time.

You don’t even have to pop these granola bars in the oven, they are no bake which makes this recipe a perfect snack bar for when you’re feeling peckish or when on the go. When meal prepping, I particularly like to make these in a big batch that I can enjoy throughout the week – They’re freezer friendly too! If I’m not making peanut butter cookies, I’m making this!

Chocolate Chip & Peanut Butter Granola Bars Ingredients

You only need 7 basic ingredients in this recipe to make these easy granola bars:

  • Whole rolled oats – They help the granola bars to be chewy in texture, they’re also high in fibre.
  • Peanut butter – High in protein and healthy fats, the addition of peanut butter makes this a great no bake protein bar without protein powder.
  • Honey – Adds sweetness and also helps to bind the ingredients together.
  • Vanilla extract – Adds flavour (optional).
  • Finely chopped chocolate peanuts (or just normal peanuts) – Adds extra flavour, a crunchy texture and also contributes to the protein content in this homemade granola bars recipe.
  • Chocolate chips – Adds a lovely chocolate flavour and contrasting colour.

How To Make Chewy No Bake Homemade Granola Bars

The method to making no bake granola bars is simple, you’ll make them in no time! Here’s what you need to do to make them yourself.

1. Put the peanut butter in a mixing bowl.

2. Stir together the wet ingredients – Add the honey and vanilla extract into the bowl with peanut butter and mix well.

Once all your wet ingredients have come together it will look like this.

3. Add your dry ingredients to the mixing bowl – Pour your oats, chopped chocolate peanuts and chocolate chips into the wet ingredients and stir well. This does take a bit of time as the mixture seems quite dry at first but will join together as you continue to mix.

A great tip is to mix half of your dry ingredients into the wet mixture first. Then when combined, add the remaining dry mixture and stir until everything is incorporated.

4. Scoop the mixture into a baking tray lined with parchment paper – Press the mixture down till it reaches the sides of your baking tray. To make this process easier you can place another sheet of parchment paper on top of your mixture and use the spoon to press it down.

5. Time to chill – The last step in this chocolate chip and peanut putter granola bars recipe is to put them in the fridge for at least 1 hour, I like to chill mine overnight.

This step is really important as the longer they stay in the fridge the chewier the granola bars get! They taste best chilled overnight and hold their shape better.

Once chilled, with a knife cut the mixture into rectangles or squares, this is a no bake granola bar recipe, so there’s no need to put them in the oven.

Out of curiosity I did put a few in the oven, they also taste great and are dryer in texture. Curious too? You can put them in the oven on gas mark 5/ 375°F/ 190°C for 10- 15 minutes.

Possible Variations

The best thing about this granola bar recipe is that you can take out ingredients or add in ingredients you love. I might add in some dried fruit or seeds next time!

There are so many ways that you can change this granola bar recipe, here are a few ideas you could try:

  • Make it nut-free – You can turn this recipe nut free easily! if you’re allergic to nuts or prefer a granola bar recipe without nuts, you can use seed butter instead of peanut butter and seeds instead of peanuts.
  • To make this a healthy granola bar – Feel free to replace the chocolate chips in this recipe with dried fruit like raisins or cranberry. Dried fruit will also add a chewy texture in these homemade granola bars. You could also replace the chocolate peanuts with standard peanuts.
  • Make it vegan – To make these granola bars vegan, you can replace the honey with vegan honey alternatives like these. Maple syrup could be used, though it will not bind all the ingredients as well as it’s not sticky enough.
  • Make it gluten-free – You can make this homemade granola bar recipe gluten-free simply by checking that the oats used are certified gluten-free oats.
