This 30 minute meal of skillet pork chops with sweet and sour peppers will liven up your weeknight meal rotation! And it’s a perfect start to your cast iron journey.

We don’t have cable. We are a strictly Apple TV house, but even with all of the streaming apps, I haven’t found the cooking shows I love from Food Network. I can still get America’s Test Kitchen on my PBS app, and British Bake Off on Netflix, but beyond that, any other cooking shows I have seen on the streaming services are all the food competitions shows, and I really really don’t like those.

But, the one that has really struck me lately, is that Gordon Ramsey has a cooking show on Prime that is just him cooking. Not yelling and screaming at poor aspiring chefs, but him going back to the basics. This isn’t a plug, but I’ve totally loved this new Gordon Ramsey! These easy skillet pork chops with sweet and sour peppers are the first recipe on his Ultimate Cookery Course series, and I have had them hanging out in my queue to post for ages, only now finally getting around to sharing it.

I hope these are worth the wait.

  • Bell Peppers
  • Red Onion
  • Olive Oil
  • Salt and Pepper
  • Sugar
  • Red Wine Vinegar
  • Basil
  • Bone In Pork Chops
  • Garlic
  • Thyme
  • Butter

I adore Gordon Ramsey, like big fat crush on him. Yes, roll your eyes. I like the non-yelly version much more so than the reality tv cooking competition version, so it’s made watching his new show very pleasant.

Ben just rolls his eyes. But even he will watch it with me if it’s on. So, if you need another cooking show that ya know, actually teaches cooking (I know, how OLD SCHOOL!), this one is a definite must watch. Come for the recipes, and stay for Gordon’s ridiculous arms. I swoon for a man who can cook. Sorry, Ben.

Description

This 30 minute meal of skillet pork chops with sweet and sour peppers will liven up your weeknight meal rotation! And it’s a perfect start to your cast iron journey.

Ingredients

  • 2 Bell Peppers, thinly sliced
  • 1 Red Onion, thinly sliced
  • 4 Tbsp Olive Oil, divided
  • Salt and Pepper
  • 1 Tbsp Sugar
  • 2 Tbsp Red Wine Vinegar
  • 1/4 cup Thinly sliced Basil
  • 2 Bone In Pork Chops, allow to rest at room temperature for 45 minutes before cooking
  • 3 cloves Garlic, crushed (keep the skin on, crush with the side of a knife)
  • 1 small bunch fresh Thyme
  • 3 Tbsp Butter

Instructions

For the Sweet and Sour Peppers

  1. In a skillet over medium to medium-high heat, add in 2 Tablespoons of the olive oil. Add in the sliced peppers and red onion. Make sure that the veggies are sautéing (and making that hissing sound) the whole time. They shouldn’t steam.
  2. Sprinkle with salt and pepper and toss to coat. Then, add in the sugar so that the peppers and onion begin to caramelize and break down.
  3. After a couple of minutes, add in the red wine vinegar, continuing to sauté and toss the peppers.
  4. Sprinkle on the fresh basil, and once incorporated, set aside the peppers.

For the Pork Chops

  1. In the same skillet, wiped clean, add in the remaining olive oil and heat the pan until the oil is nearly smoking.
  2. Pat the pork chops dry with paper towels, and season well on both sides of the pork chops. For any fat surrounding the pork chops, make two to three cuts through the fat so that it doesn’t contract. This will make sure the pork chops stay flat and cook on the pan evenly.
  3. Place the pork chops into the heated pan and olive oil. Add in the crushed garlic cloves and fresh thyme. Cook the pork chops for about 3 minutes each side, for a medium done chop.
  4. After you have flipped the pork chops to the other side, add in the butter around the chops and baste them until done. Allow them to rest for 5 minutes before cutting and serving.
  5. Serve the peppers and pork together!

      Yes, the original is a Gordon Ramsay recipe. Since it didn’t mention exact measurements in the show, I did what I could estimate in my own cooking. I do make note of it as his original in the notes of the recipe.
