We had been talking about posting a meal including salmon for a while, but for one reason or another, we hadn’t gotten around to making it yet. This was a little surprising, being that we both absolutely love salmon. So, after weeks of whining to Bill that I was craving salmon, we finally decided to grab it for dinner one night and prepare it for the Blog. We typically will prepare it with Hayley’s Famous Marinade, but for this dish, we created something a little more simple, and a little faster to put together. Olive oil, salt, pepper, and the juice of one fresh lime. Couldn’t be easier than that, right?
For a side dish, we made another favorite of ours that we hadn’t gotten around to yet. (Our apologies to my Aunt Justine. She has been begging us to post this recipe since we started the Blog.) So sorry Aunt Justi, it’s finally here! This cauliflower “rice” is extremely simple to make and tastes absolutely amazing. We call it “rice”, but the consistency is a little more like couscous, you would never guess that it is actually cauliflower. This side dish is fantastic with shrimp, chicken, pork, beef, tuna, white fish, or with other sauteed vegetables. The recipe we are presenting to you, is how we typically cook our cauliflower “rice”, but get creative and make your own favorite rice dish with cauliflower as your medium. We would love to hear other ideas on how to prepare this dish! For the Salmon Ingredients: Process: For the Cauliflower “Rice” Ingredients: Process: For the eats: Plate the cauliflower “rice” and salmon and dig in! This dish was absolutely amazing. The salmon had a warm buttery flavor with the slightest hint of lime. The cauliflower “rice” was a delicious addition to the salmon, with its peppery garlic flavor, a hint of coconut oil, and chopped onion for added texture. Try this meal on your own, or surprise a dinner guest with the faux rice. They are sure to be in awe of your creative cooking abilities! As always, enjoy!

The 'rice' is so simple! I used the food processor and it took no time at all. I added some fine cumin and ate it as a side dish tonight with a little coconut aminos mixed in. yummmmmm. I think your blog will become my food bible when I move into my new place 🙂

And if you have no microwave? Could you cook it in the toaster oven or on the stove and get it to the right consistency?

Hi Heather,
Sorry for the late response. We actually have stopped using our microwave to pre-cook the cauliflower. It works just as well to throw the raw cauliflower in the frying pan and saute it as is. Just taste test it to make sure it cooks to the consistency that you prefer.

I made the cauliflower rice with salmon and shrimp and my kids were even calling it rice 😉 It was a huge hit…delicious! I love your blog …the recipes are so yummy!

So glad to hear! Cauliflower rice is definitely messy, that's the only bummer. We are really into mashed cauliflower right now. It is delicious as well. Enjoy!
