  • For the Pork Chops:
  • 1/2 cup all-purpose flour

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1 tablespoon salt

  • 1/2 teaspoon black pepper

  • 4 bone-in pork chops, about 3/4-1 inch thick

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter, divided

  • For the Gravy:
  • 1 medium onion, thinly sliced

  • 4 cloves garlic, minced

  • 1 teaspoon fresh thyme, chopped

  • 1 cup chicken broth

  • 1/2 cup heavy cream

  • Chopped parsley for garnish, optional

Instructions

  • Mix together flour, onion powder, garlic powder, paprika, salt, and pepper in a shallow dish. Dredge each pork chop in the flour mixture until well coated. Set aside.
  • In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once melted and sizzling, add the pork chops. Cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside on a plate.
  • In the same skillet, add the remaining tablespoon of butter. Sauté the onions until translucent and starting to caramelize. Add garlic and thyme and sauté for another 1-2 minutes.
  • Gradually pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a gentle simmer.
  • Slowly stir in the heavy cream. Continue to simmer until the gravy thickens slightly.
  • Return the pork chops to the skillet, spooning some of the gravy over them. Cover and let simmer for another 5-7 minutes or until the pork chops are cooked through.
  • Garnish with chopped parsley if desired.
